Ingredients

    1 cup uncooked oatmeal
    1/4 c flour
    2 tbs wheat germ
    1 tbs honey
    1/2 tbs molasses
    .5 tsp baking powder
    .5 tsp baking soda
    1/4 tsp salt
    1 1/2 c buttermilk
    1 large egg
    .5 tsp vanilla extract

Tips

This is adapted from Bon Appetit August 1999 Oatmeal-Buttermilk Pancakes recipe. I replace some of the flour with wheat germ, replace the sugar with honey and molasses, and omit the butter. I put it in the blender to "fool" my picky kids that they are traditional white-flour pancakes.


Directions

Mix all ingredients by hand or in a blender. Chill in refrigerator overnight. Cook like pancakes.
