Number of Servings: 4

Ingredients

    Flounder (fish), 4 fillet
    Diced Tomatoes, 1 cup
    Tomatoes, red, ripe, canned, with green chilies, 1 cup
    Mushrooms, fresh, 1 cup, pieces or slices
    Peppers, sweet, red, fresh, 1 cup, chopped
    Onions, raw, 1 cup, chopped
    Italian seasoning, 2 tbsp
    Black Olives, canned (small-extra large), ½ cup chopped
    Chopped garlic 2 tsp
    Mrs. Dash seasonings 2 tsp
    Parmesan cheese grated 1/2 cup divided

Directions

Preheat oven to 350 degrees. Saute mushrooms, onions, garlic & peppers till soft. Add tomatoes and 1/2 of parmeasan cheese and heat through. Coat baking dish with cooking spray. Place flounder in baking dish and cover with tomato mixture and top with remaining pareasan cheese. Bake at 350 degrees for 12-15 minutes and cheese is melted.
