Ingredients

    Sprout's Extra Firm Tofu, 85 gram(s)
    Onions, raw, .25 cup, chopped
    Kirkland Signature Real Mayonnaise, 4 tbsp or .25 cups
    Great Value All Natural Yellow Mustard, 2 tbsp

    Any brand would work in place of these!

Tips

I have added celery into the recipe for an additional crunch.
I make this salad usually for use in a traditional sandwich or just an open face sandwich (one slice of bread compared to two). It tastes great with some nice sourdough bread. I lay some romaine lettuce leaves on the face of the bread, put .25 cups of the salad on top, sprinkle some black and cayenne pepper, and then eat.
Or if you're feeling lazy, just scoop some out and eat with some crackers.


Directions

1. Drain tofu. Wrap the tofu in a paper towel and press down to expel more of the water. Place tofu block in mixing bowl. (I usually just save some time by mixing it in a Pyrex container so I can just store it when finished)
2. Measure 2 tablespoons of yellow mustard or any other variety you desire. Pour into the mixing bowl with the tofu block.
3. Measure .25 cups of Mayo, any variety works. Pour into the mixing bowl with mustard and tofu block.
4. Dice onions (I found around .25 cups works best for getting the flavor and not the nasty breath after). Toss in the mixing bowl with the other ingredients.
5. Mash ingredients in mixing bowl with a fork. I use my mashed potato mashing abilities as inspiration :D
6. Eat up and enjoy!
