Introduction

Ingredients

    1 1/4 cup 100* water
    2 T sugar
    1 T yeast
    2 T oil
    1 tsp salt
    2 eggs
    4 T soy protein powder
    2 T vital wheat gluten
    1 cup whole wheat flour
    2 cups while flour
    2 chewable vitamin c tablets, crushed

Tips

If the sponge does not get puffy, the yeast is dead and the bread will not rise. Throw it out and try again.

For a thin crust, especially in dry climates, place a 9x13 pan to the bottom of the oven and fill with 2 inches of boiling water. Bake as usual.


Directions

Combine sugar, yeast, water, and whole wheat flour in a large mixing bowl to create a sponge. Let sit 10-20 minutes or until puffy. In a separate bowl combine oil, salt, and eggs, and vitamin c then whip with a fork until well combined. Add to sponge and mix well. Mix in protein powder, wheat gluten, and remaining flour. Let sit for 30-40 minutes until doubled in size. Form into loaves, place in pans, and let it rise again. Bake at 375* for 40 minutes or until the internal temperature has reached 190*.

Serving Size: makes one large loaf, about 20 slices
