Ingredients

5 cups flour
2.5 cups lukewarm water
2.5 tsp yeast
2 tsp salt
2 Tbsp sugar
2 Tbsb olive oil
Tips
To test if the dough has doubled, poke it with 2 fingers. If deep dents remain, it's doubled!
Directions
Mix 4 cups of flour with yeast, salt and sugar in the bowl of a stand mixer. Using dough hook, blend in oil and water gradually until dough begins to form stretch strands. Add remaining cup of flour a bit at at time, until dough forms a ball (you may need to add more or less flour depending on the humidity that day!).
Remove from bowl. Wash bowl then spray with nonstick spray. Return dough to bowl, cover and let rise until doubled in bulk. Form two loaves, put into sprayed loaf pans, cover and let rise again until dough just reaches the top of the pans.
Preheat oven to 350 degrees F. Bake 45-50 minutes until loaf is nicely browned and sounds hollow when tapped on the bottom.
Serving Size: Makes two 20 ounce loaves
