Number of Servings: 6

Ingredients

    1 Tbsp Olive Oil
    1 Onion, chopped
    1 green onion, chopped
    1 Celery Stalk, chopped
    2 cloves garlic, more if you like
    1 tsp Thyme
    1 tsp Sage

    1/2 Cup green lentils
    1/2 cup Pinto Beans
    1/2 cup Quinoa
    2 cups low sodium chicken broth (or use vegetable broth)


Tips

I chop the vegetables while the beans are cooking to save time.


Directions

place beans and lentils in about 4 cups of water, bring to a boil and cook 30 minutes to soften beans. Add chicken broth and quinoa and spices and continue cooking. Meanwhile, in a saucepan, heat the olive oil, add the vegetables to saute until softened. Add the vegetables to the soup and cook on medium low heat for 20 minutes to combine flavors. Add more water as necessary.
Makes 6 one cup servings. Enjoy! :)
