Number of Servings: 60

Ingredients

    1 cup orange juice (fresh)
    1/4 cup lime juice
    2 tbsp Tabasco sauce
    4 garlic cloves (minced)
    2 tbsp fresh grated ginger
    1/2 cup teriyaki sauce
    1 tbsp lemon zest (peel)
    1 tbsp cornstarch
    60 chicken wings
    salt to taste

Directions

Makes: 60 wings (5 dozen)

Combine the first 8 ingredients in a large bowl. Add the wings and toss to coat. Cover and marinate in the fridge for 4 hours or overnight (this is best), turning occassionally. Perheat the oven to 525 degrees. Line 2 baking tays with parchment paper. Arrange the wings on the baking trays. Pour the remaining marinade into a pot. Simmer for 8 - 10 minutes or until light thickened sauce forms. Meanwhile, roast the wings for 25 minutes. Drizzle with the sauce. Roast for an additional 5 - 10 minutes or until cooked thoroughly. Arrange the wings on a platter, spoon any juices in the pan over the top and serve with raw celery strips and sliced carrots with a small amount of ranch dressing. Kids and sporting fans love them.
