Introduction

This dip is amazingly versatile. We eat it on chips, melt it on tortillas for quesadillas, eat it as taco filling, wrap it in tortillas as a burrito or enchilada, etc. I am sure there are plenty more uses that we haven't thought of, too! This dip is amazingly versatile. Ingredients

    1 box of Velveeta Queso Blanco
    2 packets of mild taco seasoning
    1 pound Lean Ground Beef
    1 large can or 2 small cans of Refried beans
    1 jar of medium salsa
    1 can Rotel tomatoes and green chiles

Tips

This dip freezes really well. I always make a full batch and freeze 3 4-cup containers for later, and put another in the fridge (unless we are eating it that day). Once cold, it can be microwaved to warm in 45 second intervals, stirring in between.


Directions

Brown ground beef and season with both packets of taco seasoning.

Cut Velveeta into small cubes.

Combine all ingredients in crock-pot and cook on high in crock pot until cheese is melted, switch to low to keep dip warm.

Serving Size: Makes 48 1/4 cup servings
