Ingredients

    1 eggplant
    1 cup tomato sauce
    Olive oil cooking spray
    1 tsp salt
    1 tsp ground pepper
    1 Tbsp garlic powder
    1 Tbsp onion powder

Directions

Makes 2 servings

Cut the ends off the eggplant and cut into 4-6 (1/4-1/2 inch) strips

Mix dry ingredients in small bowl

Spray both sides of the eggplant strips with cooking spray

Sprinkle both sides of the eggplant strips with the dry mixture

Cook strips on grill (George Foreman) approximately 5 minutes

Divide the strips in half (2 servings)

Top each serving with 1/2 C. of tomato sauce

    Very Good
    So great and easy for summer! We grilled these on the bbq! My husband was hesitant because it's not the crusty fried eggplant he's used to, but he loved it! We did add 1 Tbsp of fresh shredded parm to each serving but I would have eaten without too! - 7/9/11
