Ingredients

    1 pound ground skinless chicken breast
    1/2 cup onions, chopped
    1/2 cup green bell pepper, chopped
    1 clove garlic
    1 package taco seasoning mix
    8 ounces taco sauce
    1 cup fat-free sour cream
    1 cup fat-free cottage cheese
    1 cup low-fat tortilla chips, crushed
    1 cup low-fat cheddar cheese, shredded

Directions

Heat oven to 400 degrees. Spray cooking spray on bottom of a 2-quart casserole dish; set aside. In a skillet, cook chicken, onion, peppers, and garlic clove until tender. Add seasoning mix and taco sauce; set aside. In a medium bowl combine sour cream and cottage cheese; set aside. Place half the crushed chips in the bottom of casserole dish. Add meat mixture to cover chips, then cover with sour cream mixture. Sprinkle with cheese and remaining crushed chips. Bake, uncovered for 30 minutes or until cheese has melted.

    Very very good, however the nutritional info is VERY wrong. I entered everything (low fat, too!) and it was 425 calories per serving and 1236mg of sodium!! Not to mention 40 carbs! - 1/24/08

    This is very good! I added a can of black beans to beef up the fiber content. Adjust the calories accordingly if you do so. - 1/22/08

    Very Good
    Couldn't find low-fat tortilla chips in town used ww tortilla brush with olive oil and sprinkle seasoning salt in oven until crisp. Even my husband (who doesn't like cottage cheese) liked this one. - 2/10/08
