Ingredients

    2 Eggs
    1/2 Cup Sliced Baby Bella Mushrooms
    4 oz. of Ribeye or other steak
    Your favorite steak seasoning
    1/2 Poblano Pepper
    1 Cup Cilantro
    1/3-1/2 Cup Colby & Monterrey Jack Shredded Cheese
    Hot Sauce to taste

Tips

*This does not make a "clean" omelet...comes out looking like a scrambled eggs mixture, but taste delicious. We even eat this for dinner a lot so I think this is good any time of the day.
*Also if you don't like the poblano to have a fresh crunch, you might sear it with the steak.


Directions

Prep:

*Season small strips of the steak with your favorite seasoning (we used a mixture of Montreal Steak, and a tad salt and pepper).
*For 1 serving, cut 1/2 a poblano pepper into small pieces.
*Cut up cilantro--I use half a cup or more, more or less depending how much you want to taste the cilantro
*Slice up baby bella mushrooms
*Beat 2 eggs in a bowl with a fork

Cook:
*Sear the steak in a skillet. Drain and set to the side. Fry the eggs in the hot skillet. Combine mushrooms, poblano, steak, 3/4 of the cilantro, and some shredded cheese.
*Cook until eggs are done and plate it.
*Sprinkle some more shredded cheese on top and the rest of the fresh cilantro.
*For some added heat, top with Texas Pete or your favorite hot sauce.
