Introduction

Number of Servings: 4

Ingredients

    1 tsp Extra Virgin Olive oil (evoo)
    4 - 6 ounce fish fillets, (tilapia, sole, or other white fish)
    3/4 cup chopped onion
    3/4 cup chopped green pepper
    2 garlic cloves minced
    1 15.5 ounce can chopped tomatoes (no salt)
    1 TB cajun spice mix

Directions

Heat evoo in skillet add onion and garlic cook until soft. Add tomatoes, pepper and spice, cook until heated through. Lay fish in skillet and cover, continue to cook on med-low until fish is cooked through. Remove fish to platter and spoon tomato mixture over top. Serve immediately.

Serving Size: makes 4 - 6 ounce servings with sauce
