Ingredients
Ingredients:
Egg, fresh, 6 large
Milk, 2%, .25 cup
Spinach, fresh, 3 cup
Bread crumbs, dry, grated, plain, .25 cup
Broccoli, fresh, 1 cup, chopped
Green Peppers (bell peppers), 1 cup, chopped
*Italian Sausage, pork, .5 link, 4/lb
Cottage Cheese, 1% Milkfat, .25 cup (not packed)
Onions, raw, .25 cup, chopped
Baking Powder, .5 tsp
Directions
Preheat oven to 375.
Saute onions and sausage. Mix veggies together with cottage cheese and baking powder. In a separate bowl, beat eggs and milk together. Dump all ingredients together in one big bowl and mix.
Spray muffin pan with non-stick spray. Sprinkle bread crumbs on sides and bottom of each crevice. Evenly distribute mix. Bake for 30 minutes at 375 (temps may vary). Ta-da! Let cool slightly before you bite into them and burn the roof of your mouth.
