- diced prosciutto (1/2 package)
- ½ cup frozen peas
- broccoli (however much you want)
- 1 leek sliced until the green shows
- ½ cup sliced mushrooms
- bowtie pasta
- prepared pesto (like the Bertoli kind, I used the Sprouts kind).
- Tomatoes for garnish
Tips
Do not cook the tomatoes. If you want add Parmesan cheese and crushed red pepper, as I did in the picture
Directions
1) In a medium skillet, heat to medium heat and fry up prosciutto.
2) After about 5 minutes, add sliced leek.
3) Begin to cook bowtie pasta
4) Once leeks are soft, add peas, broccoli, and mushrooms. Wait about 6 minutes.
5) Add pesto and a little bit of pasta water
6) Drain pasta and add to pesto veggie mixture.
7) Serve and garnish with tomatoes and parmesan
