Ingredients

    1 cup pumpkin
    1 cup unsweetened vanilla almond milk
    2 tbsp flax seed mixed with 6 tbsp water
    2 scoops sun warrior vanilla rice protein
    1 1/2 cups rolled oats
    1/4 cup peanut flour
    1/4 cup whole wheat pastry flour
    2 tbsp stevia powder
    1 tsp almond extract
    1 1/2 tsp baking powder
    1/2 tsp baking soda
    2 tsp cinnamon
    1/2 tsp nutmeg
    1/4 tsp allspice
    1/4 tsp cloves

Directions

Begin with a large bowl and mix together pumpkin, milk, almond extract and "plumped" flaxseed. Add the dry ingredients--protein powder, oats, the 2 flours, baking powder/soda, stevia, and spices. Put into nonstick-sprayed muffin tin (or with muffin liners) for 20-25 minutes in a 350F oven.

Serving Size: makes 12 medium (snack) sized muffins
