Introduction

Ingredients

    FOR SALAD:

    1 1/3 C Wild Rice cooked and cooled

    1 C colorful sweet peppers diced- red, yellow, orange

    1/2 medium cucumber, scored, halved lengthwise, sliced

    1 orange, lg. peeled, pith & seeds removed, diced

    1/4 C red onion finely diced

    generous amount of chopped flat-leaf parsley

    FOR DRESSING

    1 clove garlic crushed or finely chopped

    1 TBS rice or balsamic vinegar

    4 tsp Olive oil

    Salt, Pepper to taste






Directions

Make dressing first by putting dressing ingredients in a small container with a lid. Shake vigorously. Set aside.

Salad:
Be sure rice has been thoroughly drained and cooled. Pour in the dressing and gently stir to coat the rice.
Then stir in the other salad ingredients except for oranges. After salad is mixed to satisfaction sprinkle on the diced oranges. Ready to serve or can be chilled and then set out again 20 min before serving. A slightly less than chilled salad will have richer flavor.
