Ingredients

1/2 cup reduced fat peanut butter
1/2 cup cilantro, chopped
1/4 cup warm water
1/4 cup sweet chili sauce
1/4 cup lime juice
2 Tbsp rice vinegar
1 Tbsp dark brown sugar
1 tsp dried ginger
2 tsp light soy sauce
1 tsp sesame oil
2 tsp sriracha hot chili sauce
1 Tbsp minced garlic
8oz whole wheat angel hair or spaghetti noodles
2/3 cup carrots, julienned or shredded
2/3 cup red bell pepper, julienned
2/3 cup snow peas, julienned
1 Tbsp vegetable broth
Directions
Place first 12 ingredients (peanut butter through garlic) in a blender or food processor. Puree until smooth and set aside.
Heat the vegetable broth over medium-high heat. Add the vegetables, season lightly with salt and black pepper if desired, and saute for 3-4 minutes, until tender crisp. Set aside.
Cook noodles according to package directions. Drain the noodles and return to the pot. Toss with peanut sauce and veggies.
