Ingredients

    1 ham bone with meat but very little fat
    1 lb. ham, scraps, lean
    1 can Rotel tomatoes with chilies
    1/2 head med. cabbage, cut into 3 sections
    2 T. ham seasoning

Tips

Can be made in slow cooker as follows: Combine all ingredients, cook on low for 4-6 hours. Add cabbage at least one hour before serving.


Directions

1. In a large pot containing 3 qts of water, simmer ham bone for at least 1½ hour, covered.
2. Add ham seasoning and Rotel tomatoes. Simmer at least ½ hour more.
3. Cut cabbage and add it to soup about ½ to 1 hr before serving, depending on how crisp you want cabbage to be.
4. Adjust ham seasoning (add more seasoning or add water). Skim off fat. Serve hot.
