Ingredients

    2 cups flour
    1 cup whole wheat flour
    1 1/2 cups granulated sugar
    1 Tbsp ground cinnamon
    1tsp baking soda
    16 ounce can pumpkin
    1 cup canola oil
    3 large eggs

Tips

I use cooked pumpkin that I have frozen instead of the canned pumpkin, and increase cook time by 5 minutes.


Directions

Place all dry ingredients in a bowl and mix. Stir the liquids into the dry mixture until all are moistened. Pour into 3 small pans, 3 1/2 x 7 1/2 x 2 inches. Bake at 350 degrees for 40-45 minutes. Cool and slice.

Serving Size: Each loaf makes 16 slices.
