Ingredients

    1/4 cup soy flour
    3/4 cup wheat flour
    1/2 cup ground flax seed
    1/4 cup Splenda brown sugar
    1/4 cup Splenda or Stevia
    1/4 tsp nutmeg
    1/2 tsp salt
    1 tsp baking soda
    1/2 tsp baking powder
    1 cup oats
    3/4 cup egg beaters
    2 small bananas
    3/4 cup applesauce
    3/4 cup dried blueberries
    1/4 carob or semi sweet chocolate chips

    Preheat oven to 350 degrees. In a large bowl, stir together dry ingredients. Add eggs and applesauce. Mix thoroughly. Add blueberries and chocolate chips. Mix thoroughly. Spoon into muffin tins sprayed with Pam and bake at 350 for 25-30 minutes or until a toothpick inserted in the center of a muffin comes out clean.
