Introduction

Ingredients

    Boneless, skinless chicken breast halves 4(4 – 6 oz., 113 g – 170 g, each)
    Olive oil 2 Tbsp.
    Lime juice 1 1/2 tbsp.
    Grated lime zest 1 1/2 tsp.
    Cajun seasoning 1 tsp.
    [or Tupperware "Chipotle Spice"]
    Salsa
    Chopped frozen mango, thawed 1 cup *SeeNote*
    Finely diced red onion 1/4 cup
    Garlic clove, minced (or 1/4 tsp., powder)
    Finely diced fresh jalapeño pepper 2 tbsp.
    Olive oil 2 tbsp.
    Lime juice 1 1/2 tbsp.
    Chopped fresh cilantro or parsley 1 tbsp.
    Grated lime zest 1 1/2 tsp.

Directions

Preheat electric grill to medium.
Score both sides of chicken breasts several times with sharp knife. Combine next 4 ingredients in small bowl. Brush over chicken breasts. Cook chicken on greased grill for about
6 minutes per side, brushing with lime mixture, until no longer pink inside.

Lime Mango Salsa:

Combine all 8 ingredients in small bowl.
Makes: 1 1/2 cups (375 mL) salsa.
Serve with chicken.

*Note 1*
If frozen mango is unavailable, fresh or canned mango can be used instead.
*Note 2*
Use an indoor electric grill or broiler
Chicken can be placed on a greased broiling
pan and broiled on top rack in oven for about 5 minutes per side until no
longer pink inside.

Variation: Use chopped oranges or pineapple instead of mango.

    This chicken recipe is awesome, but the salsa is what really makes the dish. This is one of my favorite salsa's ever. - 7/25/10
