Introduction

Ingredients

4 pound chuck roast(or arm roast)
Salt and pepper
1 medium onion, sliced
1 large carrot, sliced
1 package lipton onion soup mix
1 Tblsp expeller pressed coconut oil
1 package of bacon
Tips
I always use expeller pressed coconut oil which has no coconut flavor or smell.
Directions
Preheat oven to 325 degrees.
Slice onions into rings placing a few in the bottom of the roasting pan. Sprinkle with a McCormicks Grillmates seasoning if desired. Slice carrots into rounds and set aside.
In large skillet sear roast in coconut oil. Seasoning each side with salt and pepper. Place in roasting pan over onions and sprinkle with onion soup mix. Start covering the roast with strips of bacon. Top with remaining onions and carrots. Sprinkle on more pepper, cover pan with foil and cook oven for 3-4 hours.
Remove foil and continue cooking for another 45-60 minutes allowing the bacon and onions to brown.
Take it out and let rest before serving.
