Ingredients

    Grilled Chicken Breast
    Goat Cheese
    Strawberries
    Red Onion
    Cucumber
    Croutons (optional)
    Kens Honey Balsamic Dressing (optional)

Tips

i like to make this dish in the fall with apples, or pears. Again, I highly recommend Honey Balsamic. Best served with a vinaigrette to cut the sweet & the cheese with an acid.


Directions

season boneless skinless chicken breast and grill until thoroughly cooked. while chicken is cooking, arrange 2 bunches of baby spinach on dinner plate. slice strawberries until you yield about 1 cup. cut red onion into slices. cut cucumber as you like. I use crumbled goat cheese, you can use cut goat cheese as well. I don't exceed 2 oz. arrange all on top of bed of spinach. when chicken is done, let cool a few minutes then slice into bite sized pieces and layer on top of salad. add croutons or nuts if you like a crunch. i recommend using kens honey balsamic dressing, its so delicious, and pairs wonderfully with the elements of this salad. perfect for spring or summer.
