Introduction
A little of this goes a long way. It isn't as low calorie as one might like, but it does have a lot of good things for you in it. As a treat every once in a while it is nice. Ingredients

4 eggs, large
2 C More Fiber Stevia Baking Blend
3/4 C applesauce, unsweetened
3/4 C canola oil
1 C grated carrots
1 C bananas, mashed (about 3)
1 C chopped black walnuts (or other nuts)
1 tsp. vanilla
3 C Whole Wheat Flour, pastry
1 T baking powder
3/4 tsp. baking soda
1 tsp. salt (optional)
Tips
This would be very good with fresh strawberries on it as a dessert. Although it is almost 200 calories for a serving, it has so many trace nutrients that are good for you, you shouldn't feel guilty having it every once in a while! :-)
Directions
Sift together dry ingredients. Put rest of ingredients in large bowl and blend together. Add flour mixture and continue blending until well mixed. Pour into a greased and floured 12" X 5" X 4" deep loaf pan, or two smaller loaf pans. Only fill 2/3 full. Bake at 350 degrees for approx. 1 1/2 hours. Check at 1 hour. If a toothpick comes out clean, it is done.
