Ingredients

1 qt Heavy Buttermilk
8 oz Cream Cheese
½ c Sour Cream
¼ c Milk or Half and Half
1 c Cucumber (minced)
2-3 Green Onions (minced)
3 tbsp Paprika
Salt and Pepper to Taste
1 loaf French Bread
Directions
(the night before)
Place the Buttermilk in a covered (preferably glass) dish and place in the oven at 200F for 6 hours. (this is to separate the solids from the liquid)
(the next morning)
Take several layers of cheesecloth and put over a colander. Pour dehydrated buttermilk into the cheesecloth to drain away the liquid. Fold the cheesecloth over the solids and place something heavy on top for 5-10 minutes.
Put the buttermilk solids into a mixing bowl. Add the cream cheese and sour cream. Blend until smooth (you can add some milk, half and half to the mixture for moisture if it’s too thick and to help smooth it out).
Peel half a cucumber and mince in blender, then add it to the mixture. Do the same with the green onions.
Add spices and taste (you can add more paprika and salt depending on taste).
Refrigerate before serving.
