Ingredients

    1 TBS coconut oil
    1/2 TBS butter
    4 large eggs
    1/2 medium onion, diced
    1/2 red pepper, diced
    1/2 summer squash, diced
    1/2 zucchini, diced
    2 small red potatoes, diced
    3.5 oz shredded mozzarella cheese
    4oz shredded pork (or any leftover meat)
    spices to taste

Tips

delete potatoes to make it lower carb. So filling, I didn't have to eat a full lunch!


Directions

add fats to skillet. Once melted, saute veggies until tender (I used leftover roasted red potatoes, so they were already cooked). Add in meat and spices. Warming through before wisking in eggs.
