Introduction

I was bored and tried throughing ingredients that I had in my cupboard-ended up really good! I was bored and tried throughing ingredients that I had in my cupboard-ended up really good!

Ingredients

    1 can sliced black olives

    1 can Healthy Request Cream of Mushroom soup

    1 can diced tomatoes

    1 pouch single serve mashed potatoes by Betty Crocker

    2 Tbs butter

    1/2 cup skim

    Optional:

    1/4 cup shredded cheese

    dallop of sour cream

Tips

I used a large can of black olives, but if you use the smaller can you can cut down on the amount of salt in here. Also, there is enough "meat"on here that you don't have to have a lot of mashed potatoes--just enough that you taste it. I didn't add the cheese or sour cream in the nutritional value.


Directions

Cook the mashed potatoes according to the instructions.

While that is cooking, through the 1st three ingredients in a pot and heat until the potatoes are done.

Place the potatoes in a serving bowl and pour sauce over it. Add garnishes (cheese and/or sour cream) as desired
