    1 Corn Muffin box mix (I used Clear Value this time Jiffy is fine too)
    1/4 cup Kraft 2% four cheese Mexican cheese blend
    1/2 can of sweet canned corn
    1/3 cup/5.5 oz soy milk
    1 egg
    1 TBSP scallions


Optional-if you like heat add one diced jalapeno to mix before cooking.

We like it served with turkey chili.


Pre-heat oven to 400 degrees. Mix all ingredients together in bowl. Spray non-stick pan with non-stick spray. Spoon a heaping TBSP into each hole in muffin tin. Cook for 15 min's.
