Ingredients

    Venison drippings (from frying venison medallions in olive oil)
    bacon drippings
    1/4 c. flour
    1 c. milk
    Penzey's Bavarian Seasoning (1/2 tsp.) or dried rosemary
    Salt and pepper to taste

Directions

Add bacon drippings to venison drippings in the pan.
Over medium low heat, whisk in flour and some of the seasonings.
Cook several minutes whisking often.
Add milk in several additions whisking thoroughly after each addition.
Bring to a boil whisking constantly. Cook until desired thickness is reaches.
Season to taste.

Serving Size: Makes more than a cup of gravy - about 8 servings or more
