Introduction
This is a take off from a French recipe I believe and I thought it a healthier alternative to most cake recipes because of the added oats and the huge amount of apples in it. It comes out with a flakey crust with a moist applie filling, absolutely devine, great to serve with lite cream if you can. 125g margarine or butter
110g of brown sugar
150g of flour
60g of instant cooking oats
1 egg
1 Tbsp of baking powder
1 Tbsp of cinnamon
2 tsp of vanilla essence
25g of margarine extra
6 small apples (lightly peeled)
Tips
I was surprised when I first tried this recipe and I though I misread the batter ingredient levels as it didn't seem enough for the amount of apples used, but I followed the recipe anyway and it came out wonderful and light and flakey, so the key is to use a smaller dish and go for the height instead if you want the batter to cover the top and bottom, but this way you get a thick apple filling inside that really is delish.
This recipe was modified from another recipe and was meant to use pastis, but as I dont have any I just used vanilla essence instead, but if you wish to try it with the pastis (if you know what that is) then just use the same amount as in the vanilla in my recipe. You can also leave more of the skin on the apple if you want to have more fibre, but I like to go half way and semi peel them, but please yourself here. Enjoy!
Directions
Beat the egg and mix the sugar. Add into the mixture the dry ingredients; flour, baking powder and oats.
Melt the 125g marg and add into the mixture.
Lightly grease a round 25cm diameter cake dish (or use non stick baking paper to line dish). Put half of the cake mixture and spread as evenly as possible onto the bottom of the dish, do not wory if the mixture doesn't completely cover the bottom just spread the best you can. Afterward layer with the caramelised apples. Cover it with the rest of the cake mixture the best you can.
Cook in a preheated oven at 370 F or 180 C for 20-25 minutes
