Ingredients:
Olive Oil, 1 tbsp
Pumpkin, canned, 1 cup
Plain soymilk, 1 cup
Agave nectar, 1/4 cup (or sub in some molasses)
Chia seeds, 3 Tbsp
Brown Sugar/Sucanat, 1/4 cup
Spelt Flour, 1 cup
Oats (run through the food processor), 1 cup
Flax seeds, 3 Tbsp
1 1/2 tsp baking powder
1/2 tsp baking soda
1 1/2 tsp cinnamon
1 tsp nutmeg
1/2 tsp allspice
3/4 tsp ginger
Directions
1 Combine first four (wet) ingredients with the chia seeds in a medium-sized bowl.
2 Run the oats through the food processor to make a coarse oat flour. Combine the oat flour with the remaining ingredients in a large bowl.
3 Add wet ingredients to dry ingredients and stir just until combined.
4 Scoop into a sprayed or paper-lined muffin tin and bake at 400 F for 10 minutes for mini muffins, 16 for regular muffins.
Serving Size: 24 mini-muffins or 12 regular muffins
