Introduction

Ingredients

    1 box barilla mini bowties
    1 bag cole slaw mix
    1 bag broccoli slaw mix
    1 med onion, sweet
    1/2 cup pasta water
    2T oil (olive, canola or sesame)
    3T white wine vinegar
    3T peanut butter, melted
    salt & pepper
    1/4 cup chopped peanuts (dry roasted)

Directions

mix together pasta water, oil & vinegar, salt & pepper.
Heat peanut butter in microwave for a few seconds & add some dressing & whisk. Keep adding dressing until mixed. Add to cooked pasta & veggie mix, toss. Add 1/4 cup chopped peanuts sprinkled in and fold.

Serving Size: makes approx 8 2 cup servings
