Ingredients

3 boneless skinless chicken breasts
9 Missiion multi-grain tortilla shells
1-28oz Las Palmas Green enchillada sauce
I large onion, chopped
I package Lipton FiestaSides Taco Rice*
3/4 cup low fat cheddar cheese, shredded
Shredded lettuce
Low fat sour cream

Directions
Makes 9 tortillas.
Boil chicken, cool and shred, add 1/2 cup enchilada sauce, set aside
Spray pan with pam, cook 1 cup diced onion till browned, add to chicken mixture
Cook rice accroding to package directions, omit the oil
Spread 1/4 cup enchilada sauce in bottom of 9x13 pan. Assemble enchilladas.
place 2 T. rice and 1/2 cup chicken in each tortilla shell roll and place in 9x13 pan, continue until all shells are used. Spread remaining enchillada sauce on top, sprinkle with shredded cheese. Bake 350, for 45 min., covered.
Serve on bed of shredded lettuce.
Optional:
add a T of low fat sour cream and 2T salsa.

*If you are sodium restricted, instead of using the Lipton packaged rice, cook one cup regular rice, add to it 1/4 cup tomato sauce, 1 tsp cumin, 1 tsp garlic powder.
