Introduction

Combine in pot: chicken broth, chopped onion, chopped green pepper, chopped chicken breast, can of Rotel, black pepper and chili pepper to taste. Cook over a slow rolling boil until onions and peppers. Allow to continue to simmer for a short period for the flavors to develop.

In a soup bowl, dice 1/4 to 1/3 of an avacodo into the bottom of the bowl. Add fresh cilantro leaves.

Ladel the soup over the avacado and cilantro. Top with crumbled tortilla chips (or homemade fried tortilla strips made from corn tortillas).

    2 boneless, skinless chicken brested diced
    8 cups of chicken stock
    Black Pepper (to taste)
    Chili Pepper (to taste)
    2 large avacados diced (no skin or pit)
    a handful of fresh cilantro leaves
    4 oz. small (or broken) tortilla chips

    (or cut yellow corn tortillas in strips and fry them in a pan untl golden brown).
