Introduction

So delish!! For the chicken, I usually use the prepackaged, frozen fajita chicken strips. Adds a little flavor and easy to just throw in so I have less prep time. So delish!! Number of Servings: 8

Ingredients

    1 tbsp olive oil
    1 med onion, chopped
    3 cloves garlic, minced
    2 tbsp chili powder
    1 tbsp dried/ ground oregano
    1 32oz box reduced sodium chicken broth
    1 1/2 c water
    1 can black beans, rinsed and drained
    1 4oz can roasted green chilis
    2 c frozen corn
    1 24oz jar medium flavored salsa
    4 c cooked, cubed chicken

Directions

In a soup pot, heat oil, saute onion and garlic until soft. Stir in chili powder and oregano. Stir in salsa. Add water and chicken broth. Bring to a boil. Reduce heat and simmer for 10 min. Add beans, chilis, corn, and chicken. Simmer on low heat for 1 hour. Serve.

Serving Size: Makes 8- 2 cup servings.
