Ingredients

400 g (3-4 small) red potatoes
1/4 c. soy milk
1/4 c. flour
1/2 tsp. garlic powder
1/2 tsp. onion powder
1/4 tsp. chili powder (optional)
1/2 c. frozen peas, corn or diced carrots mix
Salt & Pepper to taste
Oil for frying
Tips
**You may use a griddle with olive oil instead of pan frying and they are just as tasty.
Directions
1. Boil potatoes in water until cooked. Drain and allow to cool.
2. Mash potatoes together with soy milk, flour, garlic powder, onion powder, chili powder, veggies, and salt and pepper until mixture is thick and potatoes are well mashed, adding a little less soy milk and more flour as needed. Mixture should be dry, but sticky
3. Form into patties and pan fry in oil over medium heat for 3-4 minutes on each side or until browned and crispy.
Serving Size: Makes 8 small fritters (pancakes)
