Number of Servings: 8

Ingredients

    *Turkey, Ground turkey, 93% lean, 1 lb.
    *Cheese, Kraft Mexican Style Taco Cheese, 2 cup
    *Yellow Sweet Corn, Frozen, 1 package
    *Old El Paso Taco Seasoning Mix (40% Less Sodium), 1 packet
    *Trader Jose's Hot Chipotle Salsa - Low Sodium, 3 cups (any salsa will do but this is what I used)
    *Tortilla Chips, 1 bag (7-1/2 oz)

    *Black Beans, 1 can (OPTIONAL, included in nutritional info)
    *Peppers, sweet, red, raw, sliced, 1 cup (OPTIONAL, included in nutritional info)
    *Raw onion, medium size chopped (OPTIONAL, included in nutritional info)

Tips

*Could top with sour cream.


Directions

1. Brown ground meat, add onions and drain. Stir in taco seasoning. Mix with corn, black beans, peppers and salsa.
2. Layer half of the chips on the bottom of a lightly greased 9x13 pan.
3. Top with half of the meat mixture and half of the cheese.
4. Repeat the layers and cover with foil.
5. Freeze at this point, if desired. Otherwise bake at 350 degrees F for 30 min. until the casserole is bubbly and cheese is melted.

If previously frozen, bake at 350 degrees F for about 50 minutes or until bubbly and cheese is melted.

Serving Size: Makes 6-8 servings
