Number of Servings: 36

Ingredients

    3 cups whole wheat flour
    4 cups wheat bran
    1 cup rolled oats
    1/2 cup wheat germ
    1/2 cup coconut
    2 tbsp baking powder
    2 tbsp baking soda
    1 tbsp salt
    4 cups skim milk
    4 large eggs
    2/3 cup canola oil
    vanilla to tasts

    Mix dry ingredients and wet ingredients separately. Add wet ingredients of the dry but do not over mix. Bake at 400 for 18 to 20 mins. Adjust time for smaller muffins.

    Any dried fruits such as dates, apricots, cranberries, raisins, figs or apples go very well with these muffins. Spices such as cinnamon and nutmeg also accompany this well. Once in a while, I will also add a few tablespoons of molasses as well.

Makes 24 large muffins.
