Ingredients

    3 chicken breast cubed (boneless and skinned)
    1 green pepper chopped
    1 serrano pepper, finely chopped
    3 TBLS garlic pressed
    1 cup diced onion
    2 cans enchilada sauce
    1 can of black beans
    1/4 cup chopped cilantro

Tips

Optional: add tortilla strips, sour cream


Directions

Cook chicken, peppers, garlic and onion. Add rest of ingredients and simmer 15 min. Top with Monterey Jack cheese and serve
