Ingredients

    1/4 cup rolled oats
    2 tbsp fiber one cereal, slightly crushed
    1/4 cup water (could use almond milk, 9 extra calories)
    1/2 a 4-oz jar carrot baby food
    1 grated carrot stick (or 2 baby carrots)
    1/4 tsp vanilla
    dash each cinnamon, nutmeg, cloves, and ginger
    2 tbsp fat-free cream cheese, slightly melted**

    optional add-ins/toppings: raisins, pecans, walnuts, white chocolate chips

    **VEGAN OPTION: if you replace the cream cheese with Tofutti cream cheese, the recipe is instantly vegan! :)

Directions

Mix together dry ingredients, add in wet and stir to mix. Pour into sprayed baking dish and swirl in cheese. Bake at 375 for about 20 minutes, broiling another 3 if not crispy/crusty enough. Enjoy!
