Ingredients

    3 pounds of asparagus, boiled and sauteed with onion in a tbls. of olive oil or use pam olive oil spray.

    Add egg, stiring occasionally until egg is cooked in middle and pie starts to form. Bake in oven to brown top of whole frittata in cast iron pan.

Directions

Boil asparagus, then sautee with onion in olive oil.
Add egg. Season egg to taste (i.e., salt, pepper).
When egg has formed and starts browning on one side, place cast iron pan into oven to brown top of frittata.
Flip out on dish.

Serving Size: makes 12-15 2" pieces
