12 oz - Rice Noodles, Dry (find package w/NO corn starch)
1 tbsp - Vegetable Oil
3 cloves - Minced Garlic
3 - Chicken Breast, bone and skin removed
1/2 cup - Carrots, grated
1/4 cup - Bragg Liquid Aminos
1 tbsn - Lemon juice
Our family doesn't really like onions, but if you do, feel free to dice some up and add them at the same time as the garlic).
Also, many people use thinly sliced cabbage. If you do, slice up a small head of cabbage and add it before the noodles. Cook until soft, then add noodles and proceed with rest of recipe.
You can substitute regular soy sauce in place of the Liquid Aminos, but it usually has wheat, so your recipe will no longer be gluten free.
2.Heat oil in a wok or large skillet over medium heat. Saute garlic until soft. Stir in chicken, carrots and Liquid Aminos. Toss in noodles, and cook until heated through, stirring constantly. Add lemon juice, stir and transfer pancit to a serving dish.
