Ingredients

    1 lb bag of frozen broccoli florets
    1 lb bag of frozen green beans
    2 large portabella mushrooms, sliced
    8oz tofu
    .5 cup baby carrots, coarsely chopped
    1 cup coarsely chopped celery
    1 onion, chopped
    3 stalks spring garlic, minced (this is seasonal, so if it's off-season, just sub with 3-5 cloves)
    2 tablespoons Dr. Fuhrman's VegiZest (or 2 cubes no-salt boullion)
    2 cups carrot juice
    4 cups water
    1/2 teaspoon cardamom
    1/2 cup raw cashews

Directions

Throw all ingredients except for cashews into the bot and bring to a boil. Simmer for 30 minutes.

Blend the cashews with some of the liquid until it's smooth. Add to pot towards the end.

Serving Size: Makes 4 large servings
