Ingredients

    3/4 cup flour
    1/2 tsp baking soda
    1 cup oats
    dash of salt
    1/4 cup + 1 Tbsp Splenda brown sugar blend
    1 Tbsp I can't believe it's not butter light, softened
    1 Tbsp unsalted butter, softened
    2 Tbsp unsweetened applesauce
    1 tsp vanilla
    2 egg whites
    1/2 cup strawberries, chopped
    5 Tbsp white chocolate chips

Directions

1. In a large bowl, combine flour, oats, salt and baking soda. Set aside.

2. In the bowl of a stand mixer, beat applesauce, brown sugar, butters and vanilla on low speed. Add in egg whites and beat until fully mixed.

3. Slowly add the flour mixture to the egg mixture and stir well. Fold in strawberries and chocolate chips. Cover with plastic wrap and refrigerate at least 2 hours.

4. Preheat oven to 350 degrees. Lightly spray a large cookie sheet with cooking spray and set aside.

5. Scoop dough by the Tablespoon onto the prepared cookie sheet, spacing about 1/2 inch apart.

6. Bake for 10 – 12 minutes, or until cookies are golden brown. Remove from oven and allow to cool.
