Ingredients

    0.5 C Reduced Fat Peanut Butter
    0.5 C Rhubarb Jello Jam*
    1.5 C Old Fashion Oatmeal Plain - dry
    0.5 C Trail Mix or granola of your choice

    (For recipe calculation - No Name Trail Mix)

    * I use my own jam. To make the Rhubarb Jello Jam:
    Heat 12 C Fresh Rhubarb diced on a large saucepan on medium heat to reduce. It will look like a thick soup! Remove from heat and add 2 packages of Light Strawberry Jello (dry). Stir well. Pour into jars and refrigerate over night before serving.

Tips

You can skip the cooling of the jam to incorporate directly into this recipe. In that case, just warm up the peanut butter in the microwave and mix with the warm jam.


Directions

1. Place Peanut Butter and Jam in a large microwaveable bowl. Warm up (80-90 sec) until hot. Remove and stir.
2. Mix in Oat and Trail Mix. Carefully press into pan (mixture will be warm).
3. Refrigerate overnight or until firm. To serve, cut into 16 bars.
