Ingredients

    *Canola Oil, 1 1tsp
    *95 % Lean Ground Beef, 12 oz
    *Garlic Powder, 1 tsp
    *Ground Coriander, 1 tsp
    *Ground cumin, 1 tsp
    *Chili Powder, 2 tsp
    *99% fat free beef broth, 2 cup
    Water, tap, 1 cup (8 fl oz)
    *Rotel Tomatoes, 2.5 serving
    *Skim Milk, .5 cup
    *1/3 less fat Cream Cheese, 4 oz
    *2% reduced fat sharp cheddar, 4.5 oz
    * Elbow Macaroni (uncooked), 8 oz

Directions

Heat dutch oven over medium high heat. Add oil. Add beef and next 4 ingredients; cook 3 minutes.Add broth, water, and tomatoes; bring to a boil. Stir in macaroni; cover and cook 10 minutes or until macaroni is done.

Heat milk and cream cheese in a sauce pan over over medium heat. Cook 4 minutes or until cheese melts, stirring frequently. Remove from heat. Stir in cheddar. Add cheese sauce to macaroni mixture; toss well to coat.

Serving Size: 6 servings - 1 cup each
