Introduction

I made this in a 9" pie plate and covered it with aluminum foil because I couldn't find a baking dish with a lid I made this in a 9" pie plate and covered it with aluminum foil because I couldn't find a baking dish with a lid
Number of Servings: 4

Ingredients

    1 tsp oil
    2 cloves garlic, finely chopped
    1 onion, finely chopped
    1lb asparagus
    4 pollock fillets cut in large chunks
    1 tbsp dried oregano
    1 1/3 cup turkey broth
    1-2 sweet potato cut into 1/4" slices

Tips

not all the liquid will absorb or cook away, but it's very flavourful!


Directions

Preheat the oven to 400F.

saute about 5 mins: oil, garlic, onion
layer in baking dish, sweet potato, asparagus, pollock fillet, oregano and onion mixture
cover with broth and top with remaining potato slices

Cover and cook in the middle of the oven until the potatoes are fully cooked, about 50-55 min. Serve directly out of the baking dish.
