Ingredients

    bread:
    1 1/2 cups flour
    1 1/2 tsp. baking powder
    1 tsp. salt
    1 tablespoon poppy seeds
    1/4 cup chopped walnuts
    5 tablespoons butter, melted
    2 teaspoons grated lemon rind
    2 eggs
    1 cup sugar
    1/2 cup milk

    topping:
    1/4 cup lemon juice
    1/3 cup sugar

Tips

I figure if you have a 9" pan, then you should end up with at least 34 (if not 36) 1/4" slices from this loaf. Original recipe calls for pecans, not walnuts, and no poppy seeds.
For health reasons, you are MUCH better off using real foods rather than so-called lower calorie replacements., just cut smaller servings.


Directions

Mix flour, baking powder, salt, poppy seeds, and chopped walnuts. In separate bowl beat butter, eggs,1 cup sugar, and lemon rind until mixed well. Alternate adding dry ingredients and milk to mixture until well blended. Pour batter into greased 9x5x3" loaf pan. Bake in 350º oven for 50-55 minutes. Cool for 10 minutes. Prick loaf with toothpick and pour the lemon juice-sugar mixture over top of cake. Cool completely and remove from pan.
