4 tsp Powdered Egg Whites (2 egg whites could be used)
1/4 cup water (Omit if using egg whites)
2 Tbs. Rolled Oats
1 1/2 Tbs Unsweetened Apple Sauce
1 Tbs Ground Flax
3 Tbs Unsweetened Soy Milk (Or your milk of choice)
1/2 tsp Baking Powder
Dash of Cinnamon
1/4 cup Fresh Blueberries
Optional: Protein Frosting (Nutritional Information not included!)
1/2 scoop Vanilla Protein Powder
1 tsp. Vanilla fat free/sugar free pudding mix (Optional)
1 Tbs Soy Milk (or your milk of choice)
Tips
I topped my muffin with some protein frosting-Yum!
Directions
Combine all the ingredients in a microwave safe mug (I use a 2-cup Pyrex measuring cup)
Cook 5-6 minutes. Microwave times may vary.
