Ingredients

    8 oz. Italian turkey sausage
    12 oz. ground turkey
    1 medium onion, chopped
    1 medium green pepper, chopped
    5 cloves garlic, minced
    1 T canola oil
    28 oz. can tomatoes, diced
    1 can Rotel, 10 oz
    1 can black beans, 15 oz., rinsed
    3 T tomato paste
    2 T worcestershire sauce
    1 to 2 t. red pepper flakes
    2 to 3 t. chili powder
    1 or 2 dashes red pepper sauce
    1 T ground cumin
    1 t. dried oregano
    .5 t. dried basil
    salt to taste


Tips

I sometimes add smoked sausage at the end of the cooking time because my family likes that. And I will also add ground dried chilis, like pasilla, de arbol, and ancho or a mixture of all three. I'm not sure about how many servings this is, but I think it's reasonably accurate.


Directions

Saute sausage until no longer pink; drain and set aside. Saute onion, pepper, and garlic in oil until soft. Stir in ground turkey and cook until no longer pink. Stir in Italian sausage and remaining ingredients. Bring to a boil and reduce heat. Simmer for 30 minutes.

Serving Size: makes 8 1-cup servings
